What Is Fullblood Wagyu?

Fullblood Wagyu is cattle that are 100% Wagyu, with no other breed anywhere in the pedigree. Every ancestor traces back to Japanese Wagyu bloodlines, and that lineage is confirmed by registry records and DNA parentage testing rather than taken on trust.

It is worth being precise about the word, because "Wagyu" on a menu or a label can mean very different things.

Fullblood, purebred, and crossbred are not the same thing

Fullblood is 100% Wagyu. Both parents are registered fullblood, and the animal's parentage is DNA verified.

Purebred is high-percentage Wagyu but not 100%. The exact threshold depends on which registry an animal is recorded with. The Wagyu Cattle Registry, for example, sets purebred at 93.75% and above for bulls and 87.5% and above for females, and it will not round 99.95% up to 100%.

Crossbred, usually written F1, F2 and so on, is Wagyu bred to another breed, most often Angus. An F1 is a first cross, roughly half Wagyu. Each generation bred back toward Wagyu raises the percentage.

Most beef sold as Wagyu in the United States is crossbred. That is not a criticism of it. It is simply a different product, and the difference is worth knowing when you compare prices.

How Wagyu left Japan, and why so little of it did

The reason fullblood Wagyu is uncommon outside Japan comes down to a short window of history and a very small number of animals.

1976. The first Wagyu leave Japan for the United States, four bulls brought over by Morris Whitney. Two are Japanese Black: Mazda, of the Kedaka line from Tottori, and Mt Fuji, of the Tajima line from Hyogo. Two are Japanese Red: Judo and Rueshaw, from the Kumamoto Red line. For seventeen years these four bulls and their descendants are the entire American Wagyu gene pool, which is why the early American herd was crossbred by necessity. There were no Wagyu females.

1991. Semen from a fifth bull, Itotani, reaches Canada.

1993. The first Wagyu females leave Japan. The Mannett Group imports two bulls, Michifuku and Haruki 2, and three females, Suzutani, Rikitani and Okutani. This is the moment a fullblood herd outside Japan becomes possible at all.

1994. The largest wave. Shogo Takeda ships 35 Black females and five Black bulls. Japanese Venture Partners brings three Black bulls and twelve Black females. Dr. Al and Marie Wood import twelve Red Wagyu.

1996 and 1997. The last shipments, including Westholme and Takeda Farms, along with further Black females and bulls.

1997. Japan declares Wagyu a national treasure and ends the export of live cattle and genetics. The door closes.

In total, roughly 183 live animals left Japan, about 167 Black and 16 Red. Published counts vary depending on whether calves born to exported females are included; the Texas Wagyu Association puts the working foundation at 221 animals. Either way the number is small enough to name.

Every fullblood Wagyu outside Japan today descends from that group. Our herd included.

Australia's herd came through the same door

Australia has no protocol for importing cattle directly from Japan, so Australian Wagyu arrived by way of the United States. David Blackmore found American Wagyu cattle at Texas A&M in 1988 and arranged shipments of embryos and semen to Australia. Australian fullblood herds were then built largely from embryos out of the American herds established by the 1993 to 1997 imports, with Takeda-line genetics shipped across in 1996 and 1997.

So the American and Australian fullblood herds are not separate stories. They are two branches of the same small family tree, grown from the same handful of animals that left Japan before 1997.

Why that narrow foundation still matters

A few hundred founding animals is a small gene pool for a worldwide breed. Three things follow from it.

Pedigree is not decoration. When a breeder can name the bloodlines behind an animal, Tajima, Kedaka, Shimane, Itozakura, that is a real statement about what it inherited, not a flourish.

DNA verification matters. With a gene pool this narrow and a price premium this large, registries require parentage testing rather than paperwork alone.

Fullblood stays genuinely scarce. You cannot make more foundation genetics. Every fullblood animal alive descends from that closed group, which is why fullblood commands a premium over crossbred and why the supply cannot simply be scaled up to meet demand.

Why kitchens pay for fullblood

The honest answer is consistency.

A kitchen buying a cut needs it to behave the same way every service: the same marbling, the same rendering, the same yield off the trim, the same result at the same temperature. Genetic uniformity is what buys that predictability. In a crossbred animal, half the pedigree is contributing traits from another breed, and how much marbling any individual carries varies more from animal to animal.

That predictability is worth money to anyone costing a plate, and the scarcity and the provenance are worth something on a menu as well. It is the same reason a fullblood animal is worth more to a breeder than a high-percentage one.

Where our beef sits

Our herd is Fullblood Wagyu, DNA verified and dual registered, raised on our family ranch in Montgomery, Texas. The cattle are pasture raised and grain finished.

Every carcass we process is graded by MIJ camera, which measures the intramuscular fat in the ribeye rather than estimating it by eye. We publish the measurement rather than converting it into a grade from another system.
