Houston is not short of places to buy a steak. What is harder to find is beef you can trace to one ranch and one animal. We raise Fullblood Wagyu and Beefmaster cattle at DL Texas Ranch in Montgomery, Texas, north of the city in Montgomery County, and we finish every animal we sell right here on the ranch. No feedlot, and no blending with anyone else's beef.

Two ways to get it
Shipped. Most Houston orders ship. Everything leaves the ranch vacuum sealed and frozen solid, packed in an insulated box with dry ice, on expedited transit so it arrives still frozen. Shipping is calculated by weight and destination.
Picked up. If you are heading north anyway, order online and choose Pickup at checkout. It is free and ready in about 24 hours. People combine it with a run up to Lake Conroe or a stop in Montgomery. See Visit the Ranch for how it works.
What Houston tends to order
Brisket, first and foremost. This is a brisket town, and a Wagyu packer behaves differently in a smoker than a commodity one. It renders more, it forgives more, and it does not need babysitting through the stall the way a lean brisket does. We sell whole packers and flats by weight range.
Steaks for the occasion, Beefmaster for the week. Wagyu ribeye and filet for a night that matters; Beefmaster ground, roasts and steaks for ordinary cooking. Buying both from one ranch is the point.
Tallow. Houston cooks who fry and sear seriously go through rendered Wagyu tallow faster than anything else we make.
What fullblood means, and why it is rare
Most Wagyu sold in the United States is crossbred, usually Wagyu over Angus, and legally still sold as Wagyu. Ours is not. Our cattle are 100% Japanese Wagyu genetics, DNA verified, dual registered with the American and Australian Wagyu Associations, and part of the USDA Process Verified Authentic Wagyu program.
We also grade every carcass with an MIJ camera, which measures the intramuscular fat in the ribeye rather than estimating it by eye. Carcasses measuring 40% or higher digital marbling percentage become Wagyu Reserve. We publish the number because we have it.
