Beefmaster Petite Tender

A small shoulder cut, sold as whole tenders and as medallions. Beefmaster is lean and naturally flavorful, so keep the cooking simple. Sear it hot, rest it, then slice against the grain. Thaw in the refrigerator before cooking. An easy weeknight steak, and good sliced over rice, salads and tacos.
