Kidneys from our own Fullblood Wagyu.
Kidney is the most assertive thing on the animal and it rewards a little preparation. Split it, cut out the white core and suet at the centre, then soak it in cold water or milk for an hour or two, changing it once. That soak is the difference between a kidney dish people ask for again and one they do not.
Two directions: fast, sliced thin and seared hard for devilled kidneys on toast, done in a couple of minutes; or slow, diced into a steak and kidney pie or a pudding where it cooks down alongside chuck for a couple of hours. What does not work is the middle ground, where it turns rubbery.
1 to 1.2 lb portions.
