Wagyu Reserve Heart
Our Reserve Fullblood Wagyu Heart is a prized specialty cut that showcases just how remarkable true nose-to-tail eating can be. Beef heart naturally offers a firm, steak-like texture and deep beef flavor, while the superior intramuscular fat of Fullblood Wagyu adds a richer mouthfeel, greater tenderness, and a buttery, umami-forward finish rarely found in conventional beef heart.

What Reserve Means
Reserve is limited to carcasses measuring 40% DMp or higher on the MIJ camera. Not every carcass makes it. How we grade every carcass
Preparation: Trim away the exterior fat and tougher connective tissue before cooking. For quick-cooking preparations, slice the heart thinly against the grain and marinate it before searing. For a more tender, slow-cooked result, cut it into larger pieces and braise gently until the connective tissue softens.
Cooking Methods: Quickly grill or pan-sear thin slices over high heat, or braise low and slow for a rich, tender result. Avoid overcooking thin slices, as heart is still a naturally lean working muscle despite the additional Wagyu marbling.
Best Uses: Grilled slices, tacos, skewers, steak salads, stir-fries, braised dishes, stews, or premium ground-beef blends.
Frozen & Thawing: Our Reserve Wagyu Heart is vacuum-sealed and shipped frozen to preserve its quality and freshness. Thaw in the refrigerator for approximately 24–48 hours before preparing. For quicker thawing, keep the package sealed and submerge it in cold water, changing the water every 30 minutes.
