Wagyu Reserve Jerky

Jerky made from our Wagyu Reserve cattle, the highest-marbling Fullblood Wagyu we raise.

Salt, pepper and garlic. That is the entire ingredient list. No cure, no sugar, no preservatives. Most jerky on a shelf contains sodium nitrite and sugar, and that is what makes it shelf stable for months in a gas station. Ours has neither, which is the point, and it is also why it ships and stores frozen rather than sitting in a pantry.

It is smoked and fully cooked, so it is ready to eat straight from the pack. About 0.25 lb per pack. Keep it frozen; once thawed it keeps in the refrigerator.

What Reserve Means

Reserve is limited to carcasses measuring 40% DMp or higher on the MIJ camera. Not every carcass makes it. How we grade every carcass
