Wagyu Reserve Petite Tender

A small shoulder cut, sold as whole tenders and as medallions. It is lean and fine grained, so it cooks quickly and rewards a simple approach. Sear it hot, rest it, then slice against the grain. Thaw in the refrigerator before cooking. Good as a fast weeknight steak, and good sliced over rice, salads and tacos.
