Wagyu Round Roast

Our Fullblood Wagyu Round Roast is a lean, flavorful roast cut from the hind leg. The round is typically known for being a firm cut that can become dry, but the natural marbling of Fullblood Wagyu adds richness, moisture, and a deeper beef flavor rarely found in a traditional round roast.

Although it carries more marbling than a conventional round roast, this is still one of the leaner Wagyu cuts. It performs best when cooked in one of two opposite directions: gently roasted to a precise doneness and sliced paper thin, or slowly braised until fork-tender.

For Roast Beef: Salt the roast the day before cooking and leave it refrigerated overnight. Slow-roast at 250°F until it reaches approximately 125°F internally, allow it to rest, then sear the exterior over high heat to develop a deeply browned crust. Slice paper thin across the grain for roast beef, French dip sandwiches, or cold sandwiches.

For Pot Roast: Braise the roast gently with broth, vegetables, and aromatics for approximately three hours, or until it becomes fork-tender. This method transforms the lean working muscle into a rich, comforting pot roast.

What to Avoid: Roasting the round until well done and then cutting it into thick slices. Because the round has less fat to protect it than many other Wagyu cuts, it can move from tender to dry within a narrow temperature window.

Temperature Note: The 125°F pull temperature described above is intended to produce a medium-rare finished roast after resting and searing. Medium-rare beef at approximately 130–135°F is a cook’s preference and is not the USDA safety recommendation. The USDA-recommended safe minimum temperature for whole-muscle beef is 145°F followed by a three-minute rest.

Frozen & Thawing: Each roast is vacuum-sealed and shipped frozen to preserve its quality and freshness. Thaw in the refrigerator for approximately 24–48 hours, allowing additional time for larger roasts. For quicker thawing, keep the package sealed and submerge it in cold water, changing the water every 30 minutes.
