Wagyu Reserve: the top of our own scale

Every carcass we process is graded by MIJ camera, which measures the intramuscular fat in the ribeye rather than estimating it by eye. That measurement is the digital marbling percentage, or DMp. Reserve is limited to carcasses that come back at 40% or higher.

Not every carcass makes it. The ones that have qualified measured from 47.9% up to 64.7%, with an AUSMEAT marble score of 9+, the ceiling of the Australian scale. This is the same Fullblood herd, the same pasture and the same finishing program as the rest of our beef. Reserve is simply what happens when a carcass exceeds what the grading scale was built to measure.
